2012 All-In Claret

Winemaker Notes The 2012 All In Claret is one of my favorites in recent years. The vintage brought about dark aromas and flavors of blackberry and cherry paired with anise and a bit of thyme. The barrel aging softened the tannins and created a plush texture while adding notes of a sweet oak toast and nice hints of vanilla. The wine can be enjoyed now, but will age gracefully over the next 8-10 years. Food Pairing This is a great wine to pair with a beautifully seared Filet Mignon. This tender cut will balance the wines soft tannins and will combine for a wonderful evening.
Appellation: Alexander Valley
Composition: 54% Cabernet Sauvignon, 42% Merlot, 4% Petit Verdot
Aging: 18 months in 63% French oak (21% new) and 37% American Oak (11% new)
